- Baked blueberry pancake cobbler from Smitten Kitchen Keepers
- Rode my bike for the first time in a while and walked once with a friend
- Headed up to Saint Edward State Park for a warm afternoon walk with my husband 🥰
- Finally gave in and ordered new sneakers online
After investments came up twice in one day, I updated my investment portfolio spreadsheet, which I try to do quarterly-ish. This reminded me that I’m paying a $25 quarterly fee for my old employer’s retirement account, which is cheap as a percent except I don’t have any control over the funds in it, so I might prefer to roll it over somewhere I could invest in index funds instead of whatever the fund is doing. But I have a Roth IRA, not an IRA, so I’d need a new account (How many retirement accounts does a girl have to have 😑 Good problem to have, I know.) So I may want to set up a new self-employed 401(k) sooner than later.
Dinners:
- Roasted veg couscous bowl (Israeli couscous, roasted eggplant and bell pepper, crisped chickpeas, carrot salad, feta and a hard-boiled egg)
- Burgers and fries 🍟🍔😍 First time ordering delivery in months!
- Spanish chickpea rice pilaf 👍 + roasted garlic eggplant + castelvetrano olives
- Fried eggs, Pillsbury crescent rolls, baked beans and cheddar cheese bites
- Gnocchi and parmesan cream sauce + steamed broccoli
- Not-great burritos from a new taco truck *sad trombone*
- Cheesy mushroom toast
